Mashed Potato Cake

I was trying to use up what was in the fridge.  Ever do that?   It just so happens that I was recently sorting through old books, and paperwork, and recipes, and pictures, and all sorts of things – and had come across this recipe.  And, since I just happened to have a couple of mashed potatoes left, I thought – why not use em’ up?  Neighbors are returning from a mission trip to Cuba and I like to leave them a little something on their own kitchen table when they return home.  So, I whipped this yummy cake up today!

Ingredients:  

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 cup cold mashed potatoes
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1/4 cup baking coca
  • 1 tsp baking soda
  • 1 cup milk

Directions:

Cream the butter and sugar until it’s nice and fluffy.  Add the eggs, and (in the words of my life-long friend Claudette), beat the heck out of it after each one.  Then, add the cold mashed potatoes and the vanilla.  Combine the flour, cocoa, and baking soda, and add that mixture a little bit at a time with the milk in between, blending the mixture really well after each addition.

Pour into a well-greased 13x9x2 inch baking pan and bake at 350 for about 40 minutes or until the cake tests done!  Tastes great with cool whip, with cream cheese frosting, (or with ICE CREAM…  duh!)   It kind of has the consistency of a dense brownie, instead of a fluffy cake.  It’s very yummy!

Oh, and always lick the bowl.  It keeps you young 😉

    Just read your 2 new blogs and enjoyed both of them. The new dishes are beautiful. What color tablecloth do you plan to get?? As I was looking at your list of recipes, I spotted a LIGHTHOUSE PINEAPPLE CAKE BY JUDY AND BRENDA. Who could that have come from? Sure enough, I read the ingredients and there it was – OUR PINEAPPLE CAKE. Did not know you had added it to your recipe collection. WOW. Such a surprise and it sure made me smile. I make it for almost every holiday dinner. I could actually eat the whole thing – a day at a time BUT i don’t. Still miss my dear sweet funny crazy sister. There will never be another BRENDA. GOD BLESS HER. Hopefully she is without pain now. No more work, no more taking care of Mom and never being able to please her. Thanks again. Great way to start my day. Jordan and I went shopping yesterday and she spent last night here and again tonight. We got lots of new and used clothes. Love you.
